Farmhouse Fruit Cake
The cake from the 1947 'Best in the World' advertisements — a proud, deep fruit cake that keeps for days and slices like a dream.

Ingredients
- 225g butter, softened
- 200g soft brown sugar
- 4 medium eggs
- 300g plain flour
- 2 tsp Borwick's Baking Powder
- 1 tsp mixed spice
- 450g mixed dried fruit
- Zest of 1 lemon
- 2 tbsp milk
Method

Heat the oven to 160°C (140°C fan). Line a deep 20cm tin.

Cream the butter and sugar, then beat in the eggs one at a time.

Fold in the flour, Borwick's Baking Powder and spice, then the fruit, zest and milk.

Spoon into the tin, level, and bake for 1½ hours or until a skewer comes out clean.

Cool in the tin. Wrapped well, it improves for a day or two — if it survives that long.
